TOMATO & FETA SALAD

Here's a quick and yummy salad for any summer meal!

Ingredients

  • 3 pints of halved cherry tomatoes

  • Salt & pepper for tasting

  • 2 tbsp red wine vinegar

  • 3 tbsp extra virgin olive oil

  • 2-3 cloves of garlic; grated or minced

  • 1/2 cup olives; roughly chopped

  • Favorite salad greens

  • 1/2 cup chopped cilantro

  • 1/2 cup chopped parsley

  • 8 oz feta cheese

Prep

  1. To marinate the tomatoes, combine the cherry tomatoes, salt, and pepper in a small bowl. Quickly toss and then add the red wine vinegar, olive oil, garlic, and olives. Toss again and then set aside to marinate for ten minutes.

  2. Take your favorite salad greens and add them to a large bowl or platter.

  3. Take the marinated tomatoes and olives and pour them over the greens.

  4. Add the chopped cilantro and parsley, then toss the salad again.

  5. Then top with the feta cheese and serve.
