FARRO SALAD
A weeknight favorite that I made yet again this week. A+ from Art
SOY-GLAZED CHICKEN WITH PICKLED CUCUMBERS
This one is pretty quick on a weeknight. The latter recipe is simple but takes forever to cook. Make on a lazy, rainy afternoon while watching a movie!
CHILE CRISP CHICKEN CUTLETS
This was graded an 'A' from picky Art. I made it on a weeknight. Messy to prep but delicious!
HERB SKILLET CHICKEN WITH GREENS
I made this on a weeknight. Fairly quick and pretty tasty - a great recipe from NYT Cooking! In this easy skillet meal, seared boneless chicken thighs are nestled on a bed of herbs, browned whole garlic cloves and greens before the pan is popped into the oven to roast until golden.
BRAISED CHICKEN THIGHS WITH SWEET POTATOES & DATES
Art gave me an A+ for this one tonight! It takes some time to cook, but it's well worth the wait.
EASY CHICKEN & RICE
Art called this recipe "uninspired" at first but ultimately gave it a B+. I found it quick and easy. Perfect for a weeknight dish that you can throw together and enjoy. From New York Times cooking with some modifications.
LEMONY GREEK CHICKEN, SPINACH AND POTATO STEW
Brrrr. It is cold out this week. Here is a lemony Greek chicken, spinach, and potato stew recipe that has become a favorite! Courtesy of NYT Cooking.
MY MOTHER-IN-LAW’S CHICKEN SOUP
My mother-in-law taught me her version of chicken noodle soup, and I’ve used it ever since! Nothing earth-shaking here, just some added twists for the trying.
