CREAMY, CHUNKY TOMATO SOUP
This recipe is a go-to for Art when he wants comfort food. Quick and easy to make!
Ingredients:
2 tablespoons butter
1 medium onion, finely chopped
1 clove garlic, finely chopped
½ teaspoon of paprika
1 ½ teaspoons chopped fresh basil or ½ teaspoon dried
2 three-ounce packages of cream cheese, bring to room temperature
1 ¼ cup milk
2 cans (10 ¾ ounces each) of condensed tomato soup
2 cans (14.5 ounces each) of diced tomatoes (not petite)
Prep:
Melt the butter in a soup pot, then cook the onion and garlic for a few minutes until tender
Stir in the paprika and basil, and mix well
Add the cream cheese and mix until melted on low heat
Slowly add in the milk and then the tomato soup until blended
Mix with a hand mixer for a few minutes until smooth
Add in the tomatoes and increase the heat to medium until hot
Serve with your favorite baguette or grilled cheese sandwich!
